Preparation
Mince the garlic cloves with salt, so that nothing comes out of the mortar. When they are squashed enough, add the almonds and the hazelnuts slowly, and then keep tossing until you get an homogeneous dough. Scrape the inside part of the scalded nyores and add the obtained pulp to the mortar. Once everything is carefully mixed, add the bread crumb in vinegar, a little bit drained, and keep tossing.
When its ready, add some oil slowly keep tossing slowly at the same time!-, to get the consistency you wish.
Lay out the curly endive well drained on a tray, then some sauce. Remove carefully and then serve in plates. Tuna, Cod, anchovies and olives can be served together with it. Let everybody at the table add as much sauce as they wish.

Gastronomy
In Cubelles you can enjoy the natural cuisine of El Garraf, fisherfolk’s cooking. The typical dishes here include all cremat, rossejat, bull de tonyina and sopa blanca. As a seasonal dish in restaurants and as a result of small-scale celebrations known as xatonades, xató has been a well-established item in Cubelles for many years now.
This year Cubelles will be holding its third Xató Festival. This is a popular festival for everyone at which whoever wants to can taste this product and enjoy the events scheduled for the Third Xató Master Chefs Competition.

Get to know Josep Andreu and the old quarter of the town
Charlie Rivel Hall
Private collection from Josep Andreu Lasserre “Charlie Rivel” (1896-1983), the
most famous and universal clown ever.
Charlie Rivel made generations of people laugh and cry with his celebrated howling.
He only needed a guitar, a chair and his talent. One of his most famous acts was a parody of Charlie Chaplin, “Charlot”, up to the point that, one day, the latter asked him: “Are you imitating me or is it me who imitates you?” Another of his big successes was the parody of an opera singer. Charlie Rivel had two key assets, movement and silence which made his art become neatly universal.
The museum holds strange clothes which once belonged to the clown, like the red t-shirt, his shoes and wig; personal objects and instruments like the guitar, the chair or the box with his make-up, which, after an accurate work gave Josep Andreu such a popular characterisation. In the exhibition, visitors can also see some of Charlie Rivel’s performances, photographs, awards and acknowledgments, which depict the personal and professional life of the clown.
Charlie Rivel, the man who once said that the most precious treasure he kept was the smile from kids around the world.
