Xató has only a secret: its sauce. It bears all our ancient popular wisdom. A balsam which will irrigate the products that we set out for it. Just as wine merchants did when they came by the cellars and, after the tasting, they were invited to eat the best products from the original larder. The best salty fishes and the best winter vegetables. All this, with each houses version of the sauce, maybe imitating the wines own diversity. Just as it is to be for a preparation which people want and recognise as own.
This diversity, which has so much helped cookery make progress, is still alive in Xató nowadays. The route which is set out on this pamphlet has been able to keep five ases of diversity. Five ases which show that diversity can be one more fact to take into account. Is there anything better than find out through our own mouth what our favourite version is? Thats our joker. We let you choose. We wont get angry, whatever the decision you make. We are open-minded enough to understand that diversity is a need.
