Preparation

In a mortar carve the following ingredients: the almonds, the hazelnuts, the anchovies from which salt has been removed, the garlic cloves, the nyores pulp, the chilli –if you wish–, the salt, the fried bread slices (you can soak them in vinegar or put the vinegar separately), vinegar and salt. Mix all these up with olive oil – keep tossing until you get an homogeneous sauce!

Wash an soak the curly endives in water. Take the salt off the anchovies, the salty tuna and the cod – rip the last two out – and mix them to the curly endive in a bowl. Add the olives and finally the sauce.

Mix it up well, so all the ingredients are impregnated with sauce and serve trying to build up some sort of curly endive castle (château).

Gastronomy

The restaurants in Sitges have developed a creative, high quality cuisine in which fish takes pride of place. We must pick out for special mention the fish soups, the fish stews, or suquets, and several rice dishes including recently revived traditional recipes such as arròs a la sitgetana, angler fish all cremat and yellow gurnard suquet, that are perfect partners to go with xató de Sitges.

During the Xató Route season in Sitges a special xató set menu is available including a starter of xató de Sitges, a main course consisting of each restaurant’s particular speciality, sweets of the house and a glass of Malvasía. With each set menu you will be given a 50% discount voucher on tickets to the museums in the town.

The art of living

Cau Ferrat Museum

House and Studio of the painter and writer Santiago Russiñol (1861-1931), and meeting point for artists belonging to the Catalan Modernism movement. There are works from Rusiñol, Ramon Casas, El Greco, Zuloaga, Picasso, and others. Iron, ceramics and paintings collections.

Maricel Museum

Romanesque and Gothic collections, Catalan sculptures from the latest 19th century by Joan Rebull and Josep Llimona, and mural painting by J.M. Sert can be found there. Also the Modern Art Gallery and the Emerencià Roig sea collection.

Romantic Museum

19th Century house owned by a Catalan family. Collection of diorams which represent the social and folk life from the last century. Also the collection of antique dolls from Lola Anglada – one of the best ones in Europe - is exhibited there.
