Preparation for the sauce:
Mince the garlic cloves with salt in a mortar, then add the almonds and the hazelnuts, then keep tossing until you get the dough; add the nyores, the chilli, the tomatoes and the fried bread. Keep tossing and put some vinegar and oil slowly until it is homogeneous; if it gets too thick, thin it adding some vinegar.
Preparation for the dish:
Lay out all the ingredients on a tray and mix them with the sauce. Decorate the dish with some cod, anchovies and olives. Finally, put some more sauce on the top, so that it looks nicer.

Gastronomy
In our municipality various kinds of white, red and rosé wines of the Penedès denomination of origin are produced to go with the magnificent food offered by our restaurants. The Tourist Office has devised a route allowing you to visit these country houses and taste the wines.
Our cuisine is characterised by the creativity displayed in combining the ingredients of Mediterranean cooking. In addition to the xató of Sant Pere de Ribes, you will also find Can Rossell artichokes, sables de Sant Pau, chocolatina del Castillo de Ribes, Ribes cake and pedres del Garraf as well as other typical items.

At the beginning of every year, in Sant Pere de Ribes we celebrate the Festa del Xató, or Xató Festival. Xató is a dish with a long tradition in our town and for several years now the local inhabitants have come gathered together to enjoy this tasty mixture of delicious ingredients.
In the morning we have the Festa Infantil del Xató which gives youngsters the chance to learn the dish’s basic secrets, furthermore, different sorts of activities for childrens are programmed.

Cellar's Route

Torre del Veguer
Wines with Penedès Guarantee of Origin are made and produced in this town. The Cellars’ Route allows you to visit Catalan country houses and enjoy a wine tasting at: Celler Vega de Ribes, located at La Serra country house, hundred-year-old cellar; Bodegas Artesanales del Penedès (Winery; handmade wine products), located in a property called La Masieta, where old wines are produced; La Torre del Veguer cellar, located in a Catalan country house catalogued as an historical and artistic building; and Finca Can Ramon, a Catalan country house located on the slopes of Mount Montgròs. Several shops especialised in wine products are part of the route, i.e. El Petit Celler and El celler Can Ferran. • To ask for some information, go to the tourist information office in Sant Pere de Ribes.

St. Pau Hermitage
“Once upon a time, when birds had teeth...there was a gang of bandits in Sant Pere’s
surroundings who lived on...“, with this sentence we suggest you take part in a guided
activity addressed to the small kids.
By means of a meeting and a track game we will discover the most important flora and
fauna in this area of Garraf. For further information, please contact the Tourist Office.

The "Americanos" Route

Shelter of Sant Josep and Sant Pere
In Ribes, as in every town in the Garraf area, many people went to the Spanish colonies from the latest 18th century to the first third of th 20th Century in order to make fortune. As soon as they reached their goals they came back to Ribes and invested their money in villas and stock exchange, so they contributed to the town growth by building big houses in the colonial style.
The guided tour starts at the tourism information office, then it goes through plaça the lEsglésia (churchs square), plaça Marcer, plaça de lAjuntament (Towns Hall square), plaça de la Font and ends at Redós de Sant Josep i Sant Pere.
